Recipes By Sanjay Gupta

  • Difficulty: Easy
Servings: 3 yield(s)
Prep Time: 10 mins
Cook Time: 10 mins
Total Time: 20 mins
Ingredients
    Poha preparation
  • 200 g Poha (choora or flatten rice)
  • 1 tsp Mustard seeds(Black)
  • 2 Green chili(split)
  • 4-5 Curry leaves
  • 1 pinch Turmeric
  • tsp Salt as per taste
  • 20-25 Raisins (kishmish) (soaked in water for few minutes)
  • 1 tbsp Oil
  • For Garnishing
  • 1 Onion (chopped)
  • 1 Tomato (chopped)
  • 2 Green chili (chopped)
  • 2 tbsp Fresh coriander leaves (chopped)
  • 2-3 tbsp Fried peanuts
  • 1 cup Khatta meetha mixture (Haldiram's) (You can use any namkeen to garnish on top of poha)
  • 1 tsp Lemon juice
Instructions
  1. Put poha in a colander and run it under fresh tap water for 20-30 seconds and drain the excess water and keep it aside.
  2. Heat oil in a deep pan, add mustard seeds, and allow it to crackle. Now add green chillies and curry leaves, saute for 1 minute. Add soaked raisins, saute for few seconds.
  3. Add soaked poha, salt and turmeric, gently mix all the ingredients (make sure that poha doesn't crumble, since it is very soft). Keep it on low flame for 1 minute. Turn the gas off.
  4. Take a serving plate and place the poha (according to your quantity), now garnish it first with fried peanuts, then with chopped onion and tomatoes, then with freshly chopped coriander leaves. Squeeze few drops of lemon juice(optional), and then, finally, garnish it with khatta-meetha mixture and serve.
