Overview

UPMA – A HEALTHY BREAKFAST

Upma or rava-upma or semolina-upma is a very healthy and fulfilling dish. It is rich in taste and loaded with health benefits.

It is a traditional south Indian breakfast that is served in almost every south Indian restaurant.

One can cook it very easily in a quick time and with very few ingredients.

In different language, people call it by different names. Below is the table showing different names in different language.

Cooking Upma

The main ingredients of this dish are Rava/sooji/semolina, urad dal, chana dal, and few vegetables, like carrot, onion, ginger, and fresh green coriander leaves.

To cook it, I typically roast Rava/sooji/semolina until the rava has changed it’s colour to slightly brown and it is crisp and leaves fragrance.

Once the rava is done, transfer it into a bowl or plate and allow it to cool.

Now heat a pan and add whole spice like – cumin seeds, mustard seeds and add urad dal and chana dal and roast them for one minute. Now add cashews and roast it.

After cashew has become brown, add chopped onions, and green chilies. Saute for a minute.

Add water, and salt (as per taste). Allow it to boil on a medium flame til you see bubbles forming on the layer.

Once the water along with the mixture is boiled, start adding rava in small quantities one after the other so that it doesn’t form the lump.

Cover and cook for two minutes. Ensure that the mixture has some water content otherwise it can burn.

If the mixture has dried, add some water and then only cook.

After two minutes, switch off the flame and garnish it with freshly chopped coriander leaves and serve hot

    Roasting Semolina
  • Heat the pan and add semolina. Roast semolina(sooji) until it becomes fragrant, crisp and changes color a little bit. Ensure that the color should not change to brown.
  • Switch off the flame and remove the sooji from pan to a plate and keep it aside.
  • Upma making
  • Finely chop 1 medium-sized onion, 1 green chili, coriander leaves, and ginger.
  • Take a pan, heat it, and add 2 tbsp of ghee/oil. Now add mustard and wait till it starts to crackle, now add 1/2 tsp cumin seeds.
  • Along with cumin seeds, add chana dal and urad dal and fry for 1 minute.
  • As the dals start changing their color add cashews and fry till they become brown.
  • Now add finely chopped onions and saute the onions till they are soft and transparent.
  • Then add chopped ginger, green chili, and curry leaves. Saute for a minute.
  • Now add 750 ml of water, salt, and on a medium flame bring it to boil.
  • Once the water starts boiling, now lower the flame and allow it to boil until you can see lots of bubbles start forming on the surface.
  • Add the semolina slowly, in small quantities by spoon so that there are no lumps in the mixture.
  • Cover the mixture with a lid and allow it to cook for 2 minutes on a low flame.
  • After 2 minutes, switch off the gas and adjust the salt(if required), and mix well again.
  • Now garnish your upma with freshly chopped coriander leaves.
  • Take a bowl and serve upma hot with sambhar or coconut chutney or just eat it plain.
