Egg Bhurji – Bachelor’s Favourite
Egg bhurji or scrambled egg is a very easy-to-cook dish and the best part is one can eat in breakfast with bread or in lunch with parathas or in dinner with chapatis.
The main ingredients of egg bhurji or anda bhurji are eggs, onion, and tomatoes. One can cook this dish in relatively very little time.
Being an easy-to-cook recipe it is very popular among bachelors. In west people call it scrambled egg.
This dish cooks easily with few ingredients like eggs, onions, chilies, cumin seeds, tomatoes and salt.
Other interesting egg dish includes egg omelet, egg curry, half fry, poached egg, boiled egg, egg parantha, tomato omelet.

Heat oil in a no-stick pan. When oil becomes hot add cumin seeds and saute for few seconds or till it changes color to brown.

Now add green chilies and onion and saute till the onion becomes transparent.

Add tomatoes, turmeric, and salt and cook it for 3-4 minutes or till the tomatoes are cooked properly.

Now add eggs one by one by breaking them directly into the pan. You can also break the eggs first in a bowl and then transfer the eggs in the pan.

Saute the eggs continuously so that all the eggs are broken into small pieces.

Make sure it is crumbled properly as shown in image

Garnish it with fresh coriander leaves.

Take a bowl and add 1 portion of egg bhurji and garnish it with fresh coriander leaves. Serve hot with chapatis or parathas.
