Idli-Sambhar

Idli-sambhar is a very common breakfast you can see on the streets of Chennai.

One can enjoy this delicious yet healthy breakfast every day on the roadside and if you are a citizen of South India then you better know that this a staple food of millions of homes.

Idli is round in shape and is a combination rice-dal. In South India, they will give you coconut chutney but if you order idli in North India at the restaurants or roadside vendors, then they will serve the idli with coconut chutney, tomato chutney, and sambhar.

Idli is a combination of rice and Urad dal(split black gram), a correct ratio is of paramount importance. Soak rice and dal overnight and prepare a batter of rice and dal. Once you prepare batter then ferment it for 10 hours. Once the dal has fermented well, now it’s ready to use.

Another variant of Idli is Rawa Idli.(Click to see the recipe) It is made from semolina (also known as Rawa/Sooji).

The sambhar recipe(Click to see the recipe) ingredient includes toor dal (split pigeon peas), a mix of vegetables(gourd, onion, tomato, drumsticks, pumpkin, etc.), sambhar masala, etc.

Cook toor dal and then add vegetables, masala, and other ingredients, and tempering is done with black mustard, curry leaves.
